PLACE OF STAY - PEOPLE OF REFERENCE AT
"It's the most beautiful city we have ever seen. More of Piazza Armerina. More from Caltagirone. More of Ragusa, and most of Nicosia, and most of Enna. More and more of Modica Gela ... Perhaps the most beautiful of all cities in the world. And people are happy in cities that are beautiful ... "
(Elio Vittorini writer)
Sicilian cuisine is a riot of flavors and colors of the Mediterranean. Oranges and lemons from the inimitable scent, the sun-ripened tomatoes of Pachino, purple eggplant and zucchini crisp, small anchovies silver, precious bluefin tuna and swordfish from the pink meat, cheeses, such as Caciocavallo and Ragusa, tasty capers Pantelleria and bright green pistachios are the ingredients of excellent great recipes. Those who approach for the first time in Sicilian cuisine can not overlook some of the dishes: the fritters made with chickpea flour, the rice balls, caponata the swordfish rolls, pasta alla Norma with eggplant parmigiana, not to mention the surprising cùscusu Trapanese, demonstrating that the couscous has its own version made in Italy. Refer sweet, finally, is titanic: cannoli, cassata, cold coffee is only the beginning of a long and delicious way to paradise pastry.
