Ruby Fizz Recipe...
50ml of Gin (vodka can be substituted for the ginophobes out there)
25ml of freshly squeezed lemon juice
4 Sage leaves
The white of one egg, for a foamy body
2 Teaspoons of red currant jelly
10ml of simple sugar syrup (1:1 sugar to water)
Topped with soda water
Firstly, add all the ingredients except the soda water and shake vigorously without ice. This is to aerate the egg white. Then fill the shaker with ice and repeat.
Double strain the mix into a highball glass and fill to the brim for ice cubes. Top with soda.
The soda will react with the white and produce a foamy head on the drink.
Garnish with fresh red currants and a mint sprig and then dust with icing sugar.
Perfect for festive dinner parties and super simple to make at home!
